My love of cheese and everything that goes with it started nearly 40 years ago when I was a casual deli chick. In those days the demand for provenance came directly from the Mums and Nana's that fed the family. Authentic cuisine that was the staple of European diets. Throughout my cheese journey I've developed and managed up to 25 cheese shops for a large boutique market as their senior category manager for 10 years. I now get to share my love, passion and knowledge with you all.
Chief was a career Sailor. He protected Australia for over 44 years and has retired to work with his family. He's the muscle and grunt of the family and is often out the front making sure everything is ship shape. You'll find Chief at our Market stalls every weekend.
Ken isn't often seen out front. He is the machine that orders, cuts and wraps all our cheeses.
Having worked in the cheese industry for 7 years - specifically in artisan cheese he's most at home in the cool room or at the cutting board. But he sure does know his cheeses so if you're stuck for advice and he's around? Grab him he can help you out.
Jack has been in the cheese industry for more than 8 years. He wowed the Bondi crowd with his knowledge and passion for cheese while managing the fridges at Harris Farm Markets and continues to WOW the market crowd on weekends with his Pa. He makes a world class espresso too!
You'll see Caits happy face most days at the counter. She loves to Barista, makes the tastiest of cheese toasties and has developed a naturally strong information base for all cheeses on range. She has the best advise for platters or shareplates and can help you make the most of your customised cheese needs.
